  • 200 g sucuk cut into thin rings, spicy Turkish sausage, approx. 0.4lbs
  • ½ onion diced
  • spring onion sliced - omit the green part
  • 1 diced tomatoes or 6 diced fresh tomatoes, 400g (14.5oz) can
  • 1 tablespoon neutral cooking oil generic cooking oil
  • 3 bell pepper cut into thin strips- (alternatively, use 1 large bell pepper, Turkish, long
  • 3 egg
  • 1 tablespoon paprika smoked or sweet, powder
  • salt to taste
  • black pepper to taste
  • ½ teaspoon red pepper flakes see notes, pul biber, Turkish
  • 100 g feta cheese crumbled, approx. 0.2 lbs
  • parsley chopped, a handful

Instructions

  1. In a pan without any fat, sauté the sucuk, onions, and green onions, for 5 minutes.
  2. Add the cooking oil, tomatoes, bell peppers, paprika powder, salt, and pepper to the pan, and continue to simmer for 10 minutes or until a thick sauce forms.
  3. Crack the eggs into a small bowl, season with salt and a bit of Pul Biber (red chili flakes), and lightly stir to break up the yolks a bit.
  4. Carefully stir in crumbled feta into the egg mixture.
  5. Pour the egg mixture into the pan and gently stir to scramble the eggs.
  6. Reduce the heat to a low, and cook covered for about 5 minutes or until the eggs are set but still fluffy then serve.
