Description
This Menemen recipe starts by sautéing thinly sliced sucuk, diced onions, and spring onions until aromatic and slightly crispy. Ingredients
- 200 g sucuk cut into thin rings, spicy Turkish sausage, approx. 0.4lbs
- ½ onion diced
- spring onion sliced - omit the green part
- 1 diced tomatoes or 6 diced fresh tomatoes, 400g (14.5oz) can
- 1 tablespoon neutral cooking oil generic cooking oil
- 3 bell pepper cut into thin strips- (alternatively, use 1 large bell pepper, Turkish, long
- 3 egg
- 1 tablespoon paprika smoked or sweet, powder
- salt to taste
- black pepper to taste
- ½ teaspoon red pepper flakes see notes, pul biber, Turkish
- 100 g feta cheese crumbled, approx. 0.2 lbs
- parsley chopped, a handful
Instructions
- In a pan without any fat, sauté the sucuk, onions, and green onions, for 5 minutes.
- Add the cooking oil, tomatoes, bell peppers, paprika powder, salt, and pepper to the pan, and continue to simmer for 10 minutes or until a thick sauce forms.
- Crack the eggs into a small bowl, season with salt and a bit of Pul Biber (red chili flakes), and lightly stir to break up the yolks a bit.
- Carefully stir in crumbled feta into the egg mixture.
- Pour the egg mixture into the pan and gently stir to scramble the eggs.
- Reduce the heat to a low, and cook covered for about 5 minutes or until the eggs are set but still fluffy then serve.
Notes
- Regular chili flakes can be used in place of pul biber if unavailable, adjusting heat to taste.
