These Halloween meringue ghosts are one of my favorite quick and easy Halloween dessert recipes to make for parties!

Ingredients
- 2 large egg whites
- ½ cup granulated sugar
- ½ teaspoon pure vanilla extract
- Black edible marker

Instructions
- Preheat oven to 275°F. Line a baking sheet with parchment paper.
- In the bowl of a stand mixer fitted with the whisk attachment, begin mixing the egg whites on medium speed while slowly adding in the sugar 1 tablespoon at a time until fully incorporated.
- Add in the vanilla extract and mix on medium-high speed until stiff peaks form.
- Transfer the meringue to a piping bag and create small round dollops on the baking sheet (you want them to be about 1-inch or the size of a Hershey kiss).
- Bake for 1 hour then turn off the oven and allow the meringues to cool to room temperature inside.
- Add 2 small dots to the meringues using the black food marker to resemble eyes.
Notes
- Storage: Store meringue ghosts in an airtight container at room temperature for up to 3 days.
