Merry Cherry Cheesecake Bars

An old fashioned recipe that my family enjoys every Christmas! Easy Merry Cherry Cheesecake Bars are an easy dessert to celebrate the holidays.

For the crust:

  • 1/3 cup butter cold, salted
  • 1/3 cup brown sugar
  • 1 cup all-purpose flour

For the filling:

  • 8 ounces cream cheese (room temperature)
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 tablespoon lemon juice
  • 1/4 cup candied cherries green, chopped
  • 1/4 cup candied cherries red, chopped

Instructions

Make the crust:

  1. Preheat the oven to 350º Fahrenheit. Spray an 8x8 baking pan with cooking spray, then line with parchment paper.
  2. In a medium bowl, place the butter, brown sugar and flour. Use a pastry cutter to cut the butter into the flour/sugar mixture until it becomes coarse crumbs. 1/3 cup cold salted butter, 1/3 cup brown sugar, 1 cup all-purpose flour
  3. Set aside 1/2 cup of the crumb mixture for topping the bars. Press the remaining crumbs into the bottom of the prepared pan.
  4. Bake for 10-12 minutes or until the crust is very slightly browned.

Make the filling:

  1. In a medium bowl, cream together the cream cheese, sugar, egg and lemon juice until creamy and smooth. Fold in the chopped cherries. 8 ounces cream cheese, 1/4 cup granulated sugar, 1 large egg, 1 tablespoon lemon juice, 1/4 cup chopped green candied cherries, 1/4 cup chopped red candied cherries
  2. Spread the batter over the baked crust. Sprinkle with the reserved crumb topping.
  3. Bake for 18-20 minutes or until the cheesecake is set.
  4. Allow the bars to cool to room temperature then let set in the refrigerator for 2 hours. Refrigerate until serving.
