Description

Ingredients
- 1 pound ground beef lean
- 1 ½ cups long grain white rice cooked

Instructions
- Preheat oven to 375 degrees. In a large oven-safe skillet (see note) over medium heat saute ground beef until browned. Stir in rice, salsa, seasonings, beans, and corn and cook 2-3 minutes longer.
- Sprinkle cheese over the top and transfer the skillet to the oven. Bake for 10-15 minutes until cheese is completely melted. Top with any desired toppings and serve.
Notes
- If you don’t have an oven-safe skillet, cook the beef and rice mixture in a regular pan, then transfer to a casserole dish for baking.
- Use this mixture as a filling for burritos or wraps for an alternate serving style.
- Choose mild or medium salsa depending on your preferred spice level.
