Mexican Breakfast Quesadilla

Crunchy quesadilla with ham, cheese, and eggs then topped with a homemade avocado salsa!

Ingredients

Servings
  • 4 egg
  • 1 Tbsp half-and-half
  • 1 tomato cubed, small
  • 2 lices ham cubed
  • ¼ tsp taco seasoning
  • ½ cup cheese shredded
  • salt to taste
  • black pepper to taste

Avocado salsa-

  • 2 tomato cubed, medium
  • ½ avocado ripe
  • salt to taste
  • black pepper to taste
  • 1 tsp lemon juice
  • 1 tsp cilantro optional
  • 3 tortillas
  • 1 ½ tsp neutral cooking oil cooking, generic cooking oil
  • sour cream optional

Instructions

  1. Whisk together the eggs and half & half.
  2. In a skillet, on med/high heat, heat 1 teaspoon oil. Add the cubed tomatoes and ham. Once the tomatoes and ham are hot, pour in the egg mixture. Cook until eggs are cooked, mixing as needed to scramble. Remove from heat to lightly cool.
  3. Add the scrambled egg mixture onto one side of a tortilla, topping it with cheese and close. Repeat with remaining ingredients.
  4. Add ½ teaspoon oil to skillet, add two quesadillas into skillet. Flip once tortilla is crispy.
  5. Meanwhile, prepare salsa. Cube the avocado. Dice the tomato. Add all the ingredients for the salsa into a bowl and mix.
  6. Cut the quesadillas into triangles. Serve quesadillas with sour cream or salsa.
