Mexican Caprese Salad

Marrying two favorites: Mexican Caprese is a nod to an Italian specialty, yet with bold Mexican spice.

Ingredients

  • 2 tomato cut into wedges, vine-ripened
  • 1 avocado halved and cut into strips or wedges, ripe
  • 1 mozzarella cheese halved and sliced into wedges, large ball, fresh
  • 2 teaspoons taco seasoning mix I used the reduced sodium variety, Old El Paso brand
  • 2 tablespoons taco sauce Old El Paso brand
  • 2 tablespoons cilantro fresh, chopped

Instructions

  1. Cut the tomatoes, avocado, and mozzarella ball into wedges. Place the tomatoes into a bowl and sprinkle with Old El Paso Taco Seasoning. Toss to coat. Then arrange the tomatoes, avocados, and mozzarella on a platter or large plate.
  2. Drizzle Old El Paso Taco Sauce over the top. Then sprinkle with fresh cilantro over the caprese salad. Salt and pepper if needed.
