Mexican Casserole

This Mexican Casserole layers seasoned ground beef and beans with crushed corn chips and shredded cheddar cheese to create a baked dish combining savory, slightly spicy, and crunchy elements. The casserole is assembled with alternating layers of beef mixture, chips, and cheese, baked until the cheese is melted and bubbly, offering textured contrast and rich flavors suitable for casual meals.

Description

The recipe begins by browning ground beef and seasoning it with salt, black pepper, garlic powder, cumin, and chili powder, integrating tomato sauce, salsa, and drained northern beans to form the hearty filling. This mixture is layered over broken corn chips in a casserole dish, topped with shredded cheddar cheese, and then layered again with chips and remaining cheese.

Baked covered at 350 degrees Fahrenheit, the casserole is heated through, allowing the cheese to melt and the flavors to meld. Removing the cover in the final minutes lets the cheese brown slightly and bubble. The use of corn chips adds texture contrast to the tender beef and beans while the spices provide mild warmth and depth.

The casserole can be garnished with fresh green onions or sour cream to add freshness and cool creaminess, serving as a convenient and filling main dish.

  • 3/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1 tomato sauce 15 oz. can
  • 1 cup salsa
  • 1 great northern beans 15 oz can, drained
  • 1 cup cheddar cheese shredded
  • corn chips to taste, crushed

Instructions

  1. Preheat your oven to 350 degrees F.

  3. Put a layer of broken or crushed corn chips in a casserole dish. Pour the beef/bean mixture on top.
  4. Sprinkle with half of the shredded cheese.
  5. Put another layer of corn chips over the top. Sprinkle the rest of the cheese over the chips.
  6. Cover the casserole with foil or a lid and bake for 30-40 minutes. Remove the foil or lid for the last ten minutes to allow the cheese to get bubbly.
  7. Garnish with green onions and sour cream if desired.
