Mexican Chicken Slow Cooker Recipe
Description
The Mexican Chicken Slow Cooker Recipe uses a combination of canned corn, black beans, diced tomatoes, onion, and jalapeño to create a flavorful base for cooking the chicken breasts. The seasoning mix includes chili powder, cumin, garlic powder, paprika, oregano, salt, and pepper, which infuse the ingredients as they cook low and slow for 6-8 hours or on high for 3-4 hours. Nestling the chicken into the vegetable mixture allows it to absorb the spices deeply.
After cooking, the chicken is topped with shredded Colby jack cheese and covered briefly to melt the cheese, adding a creamy finish. The texture is tender, with the beans and vegetables contributing body and heartiness to the dish. The flavors balance mild heat, aromatic spices, and savory notes from the chicken and broth cube.
This dish is flexible for serving: it works well over rice, on a bed of lettuce as a salad, or as a filling for tortillas. Adjust the heat level by modifying the jalapeño or substituting green chilies. The recipe notes also indicate that different cheeses and taco seasoning packets can be used as substitutions.
