Mexican Coleslaw with Chicken is a mouthwatering blend of fresh veggies, zesty herbs, and shredded chicken in a creamy cumin-lime dressing.

Ingredients
- 1 lb rotisserie chicken shredded
- 1 medium green cabbage shredded
- 2 cans fire-roasted corn drained (or plain corn)
- 4 green onions sliced
- 1/2 cup quick pickled red onion or Escabeche
- 1 Jalapeño diced
- 1/2 cup cilantro chopped
- 1/4 cup pumpkin seeds
Salad Dressing
- 1 cup mayonnaise
- 1 tbsp Dijon mustard
- 2 limes juiced
- 1 tbsp sesame oil
- 1/2 tsp kosher salt
- 1/2 tsp ground black pepper
- 1/2 tsp sugar
- 1/4 tsp ground cumin

Instructions
- Place all of the chicken, cabbage, corn, onion (both), jalapeno and cilantro in a bowl.
- In another container mix together the salad dressing or use an immersion blender to puree.
- Pour dressing over salad and toss to coat completely. Chill for 15 minutes, covered.
- Sprinkle pumpkin seeds on top at serving (optional).
