Mexican Corn Soup Recipe

This soup blends chicken broth, tomatoes with green chiles, and sweet corn into a creamy base enriched with heavy whipping cream. It's seasoned with garlic, cumin, oregano, paprika, black pepper, and cayenne pepper, giving a balanced spiced warmth. Chopped cooked chicken adds substance, while shredded Colby jack cheese finishes the soup with a mild, creamy touch when sprinkled on top.

Description

Mexican Corn Soup Recipe combines frozen corn, canned tomatoes with green chiles, and chicken broth to create a hearty and flavorful base. The garlic and butter are gently simmered first to release aroma before adding broth and spices like cumin and paprika that contribute warmth and depth. Adding cooked chopped chicken boosts the protein content and makes the soup more filling. The incorporation of heavy whipping cream near the end adds smoothness and richness to the broth.

Heating the soup until all ingredients are mingled allows flavors to develop harmoniously. Sprinkling Colby jack cheese on each serving melts slightly with the warmth, giving a creamy, savory finish. The soup balances mild heat from cayenne and textures from the corn and chicken, making it satisfying and comforting.

This soup serves well as a light main dish or a starter. It pairs nicely with crusty bread to complement the creamy liquid and can be enjoyed during cooler weather or when a hearty meal is wanted without heaviness.
