Mexican Crispy Roasted Potatoes

These Mexican Crispy Roasted Potatoes are quartered red potatoes coated in olive oil and a blend of spices including ancho chili powder, oregano, coriander, garlic powder, black pepper, and a pinch of cayenne. Topped with freshly grated Parmesan and baked to crispy perfection, they finish with chopped cilantro for fresh flavor. The result is a spicy, crunchy potato side with a savory and slightly smoky profile, excellent alongside mains or as a snack.

Description

Mexican Crispy Roasted Potatoes use small red potatoes quartered and tossed with olive oil and a Mexican-inspired spice mix. The spices—ancho chili powder, oregano, coriander, garlic powder, black pepper, and cayenne—combine to season the potatoes with a smoky, herby, and mildly spicy taste. Parmesan cheese sprinkled before baking melts and browns, adding a sharp, salty crust that enhances crispiness.

Baked at 400 degrees Fahrenheit, the potatoes roast for 40 minutes total, flipped halfway to ensure even browning and a crispy exterior while maintaining a tender interior. After baking, a sprinkle of fresh chopped cilantro adds brightness and a herbaceous contrast.

This preparation yields a flavorful, textured potato dish that pairs well with Mexican or Southwestern-style meals, grilled meats, or can serve as a well-seasoned snack. The balance of spices and cheese creates a distinctive yet approachable flavor profile.

Ingredients

Servings
  • 1 1/2 pounds red potato washed and quartered, petite
  • 2 tablespoons olive oil
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon ancho chili powder
  • 1/2 teaspoon oregano dried
  • 1/4 teaspoon Coriander
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon black pepper freshly ground
  • 1 pinch cayenne pepper
  • 1/2 cup Parmesan Cheese freshly grated
  • 4 tablespoons cilantro finely chopped

Instructions

  1. Preheat oven to 400 degrees. Line a baking sheet with parchment paper or spray with non stick cooking spray.
  2. In a large bowl, add the olive oil, salt, chili powder, oregano, coriander, garlic powder, black pepper and cayenne. Toss together until potatoes are fully coated with spices. Transfer to baking sheet.Be careful not to overcrowd the potatoes. They should have plenty of room to breathe. If they don't, divide them onto two baking sheets.
  3. Sprinkle potatoes with Parmesan cheese and bake for 20 minutes. Remove from oven, flip over the potatoes and bake for another 20 minutes, until crispy.
  4. Sprinkle potatoes with cilantro, more salt if desired and serve.
