Description

This Mexican Hot Chocolate recipe simmers milk with finely chopped Mexican or bittersweet chocolate, sugar, pure vanilla extract, ground cinnamon or cinnamon stick, and a small amount of cayenne pepper to incorporate a gentle heat. The mixture is brought just to a simmer without boiling to maintain a smooth texture and prevent separation.

After simmering and thickening slightly, the beverage is whisked vigorously or frothed to create a light foam on top. It is served hot, highlighting the balance of rich chocolate sweetness, warm cinnamon spice, and the faint warmth of cayenne.

Traditional tools like a molinillo may be used to achieve a frothy finish. Adjust sweetness and spice according to taste by adding sugar or cayenne after serving.   • 2 cups milk
  • 5 ounces Mexican chocolate or bittersweet chocolate, finely chopped
  • 1 tablespoons sugar or to taste-- if you need it sweeter
  • 1 teaspoon vanilla extract Mexican vanilla is ideal, pure
  • 1 teaspoon cinnamon (or use a cinnamon stick)
  • 1/4 teaspoon cayenne pepper or to taste.. you may just want a pinch
  • Whipped Cream

Instructions

  1. In small saucepan over medium heat, whisk together milk, chocolate, sugar, vanilla, cinnamon, and cayenne. Bring to a simmer.
  2. Simmer 2-3 minutes until thickened, stirring often. Avoid getting a rolling boil. This may cause your milk to separate and it won't have as smooth of a texture.
  3. Whisk vigorously or use a hand frother before serving to make a foamy top layer.
  4. Serve immediately. (Serves 2)

Notes

  • Use a cinnamon stick simmered in the milk for a subtler cinnamon flavor instead of ground cinnamon.
  • Start with a small amount of cayenne pepper; adjust to taste as some prefer milder heat.
  • Add a pinch of salt to tone down sweetness if desired.
  • A hand frother or traditional molinillo can create a frothy top layer before serving.
