Ingredients

  • 12 flour tortillas Old El Paso Mini Stand 'N' Stuff, soft
  • 1 refried beans tin, Old El Paso
  • 6 frankfurter
  • 6 lices streaky bacon
  • For salsa
  • ½ avocado large
  • 1 tomato vine ripened
  • ¼ red onion
  • 1 tbsp Coriander chopped
  • lime juice of ½ lime
  • Coriander extra, chopped, to garnish

Instructions

  1. Preheat grill to moderately hot.
  2. Start by stretching out each slice of streaky bacon with the back of knife on a chopping mat.
  3. Roll up the frankfurters in the bacon at an angle to completely cover and secure the ends with a cocktail stick.
  4. Place frankfurters under the grill turning about 3 times until cooked and bacon crispy, takes about 12 minutes. Once ready you can move them to the bottom of your oven to keep warm.
  5. Meanwhile make the avocado salsa by finely dicing up the avocado, tomatoes and red onion and mix in a bowl together with the lime juice and coriander. Cover and place in fridge until needed.
  6. Put the refried beans in a pan and heat gently for 4 – 5 minutes.
  7. Lay the Old El Paso Stand 'N' Stuff tortillas on plate and heat in microwave for 30 seconds (or refer to instructions for alternative methods).
  8. Remove cocktail sticks from the frankfurters and cut in half.
  9. Place a couple of heaped teaspoons of refried beans into each tortilla and top with a frankfurter half.
  10. Spoon the avocado salsa over each tortilla and garnish with chopped coriander.
  11. Enjoy!
