- 1 can 10 oz enchilada sauce

Instructions
Step No.1: Preheat Oven
- Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish with nonstick spray.
Step No.2: Cook the Beef Mixture
- In a large skillet, cook ground beef over medium heat until browned. Add onions and garlic, cooking for 2-3 minutes. Stir in taco seasoning, black beans, corn, salsa, and water. Simmer for 5 minutes, then remove from heat.
Step No.3: Assemble the Layers
- Spread a thin layer of enchilada sauce on the bottom of the baking dish. Place two tortillas over it, slightly overlapping. Spread ⅓ of the beef mixture over the tortillas, followed by ⅓ of the cheese. Repeat the layers twice, finishing with cheese on top.
Step No.4: Bake Until Bubbly
- Cover with foil and bake for 20 minutes. Remove foil and bake for an additional 10-15 minutes, until the cheese is melted and bubbly.
Step No.5: Rest and Serve
- Let the lasagna rest for 5 minutes before slicing. Garnish with sour cream, cilantro, tomatoes, or jalapeños if desired.
