Description

The Mexican Pizza starts by browning ground beef with taco seasoning, salt, and pepper until cooked through and flavorful. Refried beans are warmed separately to spread easily. Four tostada shells are layered with refried beans, a third cup of ground beef, then topped with a second tostada shell.

On top of the stacked tostadas, enchilada sauce is spread followed by shredded cheese. The assembly is placed under a broiler just a few minutes until the cheese melts and bubbles. Fresh diced tomatoes, sliced green onions, and sliced black olives garnish the finished pizzas, adding freshness and texture.

The dish presents a mix of crunchy tostadas, savory meat, creamy beans, tangy enchilada sauce, and melted cheese, making it a satisfying hand-held meal or appetizer. The layered construction provides distinct crunchy and soft textures.

  • 8 tostada shells
  • 3/4 lb ground beef I use 90% lean
  • 1 tablespoon taco seasoning
  • 2 teaspoons vegetable oil
  • salt to taste
  • black pepper to taste
  • 1 cup refried beans
  • 1/4 cup Red Enchilada Sauce
  • 1 cup cheese I use a blend of cheddar and monterey jack, shredded
  • 1/2 cup diced tomatoes
  • 1/4 cup green onion sliced
  • 1/2 cup black olive sliced

Instructions

  1. Heat the oil in a large pan over medium high heat. Add the ground beef to the pan, season with taco seasoning and salt and pepper to taste.
  2. Cook, stirring occasionally, until meat is cooked through, 4-5 minutes.
  3. While the beef is cooking, warm the refried beans. 
  4. Preheat the broiler.
  5. Place 4 tostada shells on a sheet pan. Spread 1/4 cup of refried beans over each tostada, then top each one with 1/3 cup meat.
  6. Place a second tostada on top of the meat. 
  7. Spread 1 tablespoon of enchilada sauce on top of the Mexican pizzas, then top each one with 1/4 cup of cheese.
  8. Broil for 2-3 minutes or until cheese is melted. Top with tomatoes, green onions and olives, then serve immediately.
