  • 12 flour tortillas small
  • 1 cup enchilada sauce
  • 1 cup cheddar cheese shredded
  • 1/2 cup cotija cheese crumbled
  • 1/4 cup jalapeños pickled
  • 1/4 cup red bell pepper diced
  • 1/2 cup cilantro fresh
  • sour cream
  • maldon salt

Instructions

  1. Preheat oven to 350 degrees. Place tortillas on baking sheets.
  2. Spoon a thin layer of enchilada sauce on each flour tortilla. Sprinkle shredded cheddar cheese and add remaining toppings, ending with cojita cheese.
  3. Bake for 10-15 minutes or until edges get crispy and brown.
  4. Top with sour cream, Maldon salt and fresh cilantro.
