Mexican Rice
Description
This Mexican Rice recipe begins by simmering the rice in chicken broth until tender, then letting it rest covered for a few minutes to finish cooking gently. Separately, onions are cooked slowly in olive oil until translucent and browning starts, which develops sweetness and complexity. Garlic is added briefly to the onions to release its aroma without burning. Tomato paste and cumin are stirred in to combine the rich tomato flavor and earthiness of cumin with the aromatics.
After preparing the flavor base, the cooked rice is stirred together with lime juice and freshly chopped cilantro, which add a fresh, bright note and herbaceousness balancing the warm seasonings. The rice maintains a fluffy yet moist texture due to cooking in broth and folding in oil and aromatics. The seasoning is adjusted with salt before serving.
This rice is commonly served as a side dish for tacos, enchiladas, grilled meats, or beans. The citrus and cilantro make it a vibrant accompaniment that pairs well with a variety of Mexican or Tex-Mex meals.

- 1 cup long grain white rice
- 2 cups chicken broth low-sodium
- 1 tablespoon olive oil

- ¼ cup tomato paste
- 1 tablespoon lime juice from about 1 lime
- ½ cup cilantro freshly chopped
