Mexican Shredded Beef
Description
The recipe for Mexican Shredded Beef starts with a boneless beef chuck roast placed in a slow cooker. It is seasoned generously with chili powder, cumin, garlic, salt, and pepper, then topped with diced green chiles which introduce mild heat and a touch of acidity. The low and slow cooking process breaks down the meat into tender strands that pull apart effortlessly.
The resulting shredded beef has a rich, deeply flavored profile influenced by the warming spices and subtle heat from the chiles. Adding fresh lime juice after shredding adds brightness and balances the meat's richness. This method yields juicy beef that holds moisture well due to the slow cooking.
Serve the shredded beef warmed on corn tortillas for tacos, sprinkled over nachos, or combined with rice for a varied meal. The recipe notes that round or rump roasts can substitute chuck roast, giving some flexibility with cuts.
Ingredients
- 3 lb beef chuck roast boneless
- 1 can diced green chiles (7 oz.)
- 1 tsp garlic minced
- 2 Tbsp chili powder
- 1 tsp cumin ground
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 lime (juiced)
Instructions
- Place the roast in a 6 quart crock pot.
- Top the road with the garlic, chili powder, cumin, salt and pepper.
- Spread the green chilis over the roast in the crock pot.
- Place the lid on top and cook on low for 8-10 hours or high for 4-5 hours until the beef is easily shreddable.
- Shred the beef with 2 forks. Squeeze the fresh lime over the beef and stir to combine.
- Serve on tortillas, on nachos, or over rice. Enjoy!
Notes
- Round roast or rump roast can be used as alternatives to chuck roast in this recipe.
