Mexican Street Corn
Description
This Mexican Street Corn recipe prepares whole corn cobs grilled over medium heat after being brushed with vegetable oil. The grilling brings a subtle smoky flavor and tender texture to the kernels. Once cooked and slightly cooled, each ear is brushed generously with a creamy sauce made from mayonnaise, Mexican crema, and lime juice, adding richness and acidity.
The corn is then sprinkled with cotija cheese, which contributes a salty and slightly crumbly contrast, and finished with chili powder for a mild heat and cilantro for fresh herbal notes. The combination delivers bright, creamy, and slightly tangy bites, balancing the grilled sweetness of the corn.
This corn is traditionally served as a flavorful side or snack, ideal for outdoor meals or barbecues. The toppings can be adjusted to taste or ingredient availability, including substituting sour cream for crema.
