Mexican Wedding Cookies

Mexican Wedding Cookies are tender, buttery cookies made with finely chopped nuts and rolled in powdered sugar after baking. The dough is creamed with butter, sugar, and vanilla, then combined with flour and salt before adding nuts. Baking until the edges start to turn light golden yields cookies with a delicate crumb and a sweet, nutty flavor. Rolling them in powdered sugar while warm creates a characteristic sugary coating that melts slightly into the surface.

Description

These cookies are rich, tender, and slightly crumbly with a melt-in-your-mouth texture. The dough combines softened butter with powdered sugar and vanilla, ensuring a creamy base before folding in the flour and salt for structure. Finely chopped pecans, walnuts, or almonds provide a warm, nutty contrast throughout each bite. Baking at 375°F for 10–12 minutes until lightly browned on the bottom edges develops a subtle toasted flavor without overbaking.

After baking, rolling the warm cookies in powdered sugar coats them evenly, giving the traditional sweet finish that also adds a pleasing visual element. These cookies are often served during celebrations or alongside tea or coffee as a sweet treat.

To enhance flavor, nuts can be toasted whole before chopping. Chopping can be done by knife or processor to a fine consistency to better incorporate into the dough. The recipe also recommends using parchment paper for easier cleanup but notes an ungreased sheet can be substituted if needed.

Instructions

  1. Preheat oven to 375°F and line a cookie sheet with parchment paper**.
  2. Combine butter, powdered sugar, vanilla extract and salt in the bowl of a stand mixer (or you can use a large bowl and an electric mixer) and beat until creamy.
  3. Gradually, with mixer on low-speed, add flour until ingredients are well combined (be sure to scrape down the sides and bottom of the bowl!).
  4. Add finely chopped nuts and use a spatula to work nuts into dough.
  5. Scoop cookie dough by approximately 1 tablespoon and roll between your hands to form a smooth ball. Place on prepared baking sheet, spacing cookies 1" apart.
  6. Bake on 375°F for 10-12 minutes or until bottom edges of cookies are just beginning to turn light golden brown.
  7. Remove from oven and allow to cool for 10 minutes before rolling generously through additional powdered sugar. Enjoy!

Notes

  • To develop deeper flavor, toast whole nuts on a baking sheet at 350°F for 3-5 minutes before cooling and chopping finely.
  • Chop nuts finely either with a knife or by pulsing briefly in a food processor for even incorporation.
  • If parchment paper is not available, an ungreased cookie sheet can be used though cleanup may be more difficult.
