Making classic lemon meringue easier with puff pastry and tastier with Meyer Lemons! One of our favourite desserts and Meyer Lemon recipes.

Ingredients
Crust:
- 250 grams puff pastry usually 1 package, frozen
- 1 large egg beaten
Meyer Lemon Filling:
- 2 medium Meyer lemon zest and juiced
- 2 large egg
- 2 large egg yolk
- 6 tbsp granulated sugar
- 3 tbsp butter salted, cut into 1 tbsp pieces
- 3 tbsp butter unsalted, cut into 1 tbsp pieces
Meringue:
- 6 large egg 6 tbsp, white
- 3/4 cup granulated sugar
- 1 tsp vanilla extract

- There maybe some meringue leftover. Meringue will keep in the fridge for 2-3 days and freezes well for a month or two.
