Microwave Baked Apples

Microwave Baked Apples are a quick and easy dessert or snack. They taste like mini apple pies with the added bonus of being ready in about 10 minutes.

Ingredients

  • 2 apples large, crisp (Gala, Fuji, Pink Lady)
  • 2 Tablespoons butter softened
  • 2 Tablespoons brown sugar firmly packed
  • 2 Tablespoons oats
  • 2 Tablespoons dried cranberries or raisins
  • cinnamon to taste

Instructions

  1. Cut each apple in half lengthwise.
  2. Carefully cut out the core of each apple half using a knife or spoon leaving a 2 Tbsp size cavity . Place apples on a microwaveable plate, cut side up.
  3. In a small bowl, mix butter, brown sugar, oats, and cranberries.
  4. Evenly fill each apple with the mixture.
  5. Sprinkle each apple with cinnamon.
  6. Place apples in microwave with a microwave cover (or cover apples with microwaveable plastic wrap with one edge open to vent steam).
  7. Microwave on high for 5 to 6 minutes. Apples should be cooked and tender.
  8. Spoon excess liquid on plat back onto the apples.
  9. Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream.

Notes

  • You may prefer to peel the apples for baking, but I like to leave the apple skin on. It helps the apple hold its shape while baking and eating, as the skin serves as a bowl of sorts.
  • For this recipe I used Fuji apples from Stemilt Growers in Washington State. My family and I love their apples. They are the sweetest and most crisp apples I've ever had..
  • You could also use Granny Smith, Gala, or any other firm, slightly tart apple.
  • For the filling, you could add chopped pecans, walnuts or almonds for extra crunch and texture.
  • Microwave on high for about five to six minutes. You want the apple to be tender but not too mushy.
  • Be sure to use a microwave-safe bowl or plate
  • There will be juice and filling liquid on the plate after microwaving. Spoon it back over the apples before serving.  Then top wth either ice cream or whipped cream (or both!) for added flavor.
