Microwave Banana Mug Cake (ready in 1 minute)

This Microwave Banana Mug Cake is a quick, single-serving dessert made using ripe banana, basic baking ingredients, and simple mixing directly in a mug. The cake is moist, sweet, and gently spiced with cinnamon. Optional toppings like chocolate chips, walnuts, or banana slices add texture and flavor. Cooking takes only about a minute in the microwave for an accessible homemade treat.

Description

The recipe uses mashed ripe banana combined with milk, melted butter, vanilla extract, egg, flour, brown sugar, baking powder, a pinch of salt, and cinnamon powder. The ingredients are easily mixed in a mug and microwaved until the cake is cooked through but still moist. The ripe banana provides natural sweetness and moisture, resulting in a soft, tender crumb.

Toppings such as chocolate chips and toasted walnuts can be added before microwaving for added texture and flavor, while fresh banana slices or other garnishes can be placed on top after cooking. The cake is best enjoyed warm, and cooking times may need adjustment depending on individual microwave wattage.

Knowing your microwave and using a mug slightly larger than the batter amount is important to allow the cake to rise without spilling. Whisking ingredients well with a fork helps ensure even mixing and avoids lumps that affect texture. The mug cake can be customized with various toppings or glazes to suit taste preferences.

Ingredients

Servings
  • 1 banana ripe
  • 1 tablespoon milk
  • 1 tablespoon butter melted
  • ½ teaspoon vanilla extract
  • 1 egg large
  • 3 tablespoon flour
  • 3 tablespoon brown sugar
  • ¾ teaspoon baking powder
  • salt one generous pinch
  • 1 teaspoon cinnamon powder

Topping Options:

  • chocolate chips
  • walnuts toasted
  • banana slices

Instructions

  1. Use very ripe banana for this recipe. This is very important to make the cake moist, sweet and delicious.
  2. Peel the skin off ripe banana. Mash it really well.
  3. Now add in all the wet ingredients. Add to mashed banana milk, melted butter, 1 lightly beaten egg and vanilla extract. Whisk everything together.
  4. Time for dry ingredients. Add flour, brown sugar, baking powder, pinch of salt, cinnamon powder. Mix until well combined.
  5. Transfer the cake mix into individual servings mugs greased with oil or butter. Fill up the mugs ¾ full.
  6. Throw in some choco chips and walnuts on top.
  7. Place the mug into the microwave and cook on HIGH for about 60 seconds to 90 seconds.
  8. Just before serving, top with banana slices, brown sugar-melted butter glaze, Nutella, Whipped cream, ice cream, toasted nuts, sea salt sprinkled on top, or maple syrup or honey drizzled on top.
  9. We recommend eating immediately, while it’s still WARM!

Notes

  • Use a wide mug slightly larger than the batter volume to allow room for the cake to rise during cooking.
  • Whisk ingredients thoroughly with a fork directly in the mug to avoid lumps and ensure even cooking.
  • Microwave cooking times vary; adjust the cooking time so the cake is set in the center but still moist.
  • Serve immediately while warm for the best texture and flavor.
