Description
The Microwave Mac & Cheese for One recipe uses a small portion of elbow macaroni cooked in water within a mug in the microwave. The cooking process involves intermittent stirring and additional microwaving until the pasta is tender and the water absorbed.
Once the pasta is cooked, whole milk and shredded cheese are stirred in and briefly microwaved again to melt the cheese, forming a smooth, creamy sauce coating the noodles.
This method provides a quick individual portion without using pots or stovetop heat, making it suitable for quick snacks or meals. The choice of finely shredded cheddar and jack cheese aids in quick melting and creamy texture.

Ingredients
- 1/3 cup elbow macaroni small, uncooked
- 1/2 cup water
- 1/4 cup milk whole
- 1/2 cup shredded cheese we like a cheddar/jack blend, pre-packaged, finely shredded
Instructions
- Put the macaroni and the water into a mug. Microwave on full power for 2 minutes. Stir. (Note: the water will boil over just a bit, that is fine)
- Microwave for another minute. Stir.
- Microwave for a fourth minute, and then check to see that all the water has been absorbed. If not, microwave a bit more, until it is gone.
- Stir in the milk and shredded cheese and microwave for a final 30-60 seconds. Stir well, and enjoy.
Notes
- If grating your own cheese, add about 1/8 teaspoon of cornstarch to the milk to help thicken the sauce.
- This recipe is ideal for quick, single-serving mac and cheese without needing a stove.
