Microwave Peanut Brittle
Description
Microwave Peanut Brittle is made by combining light corn syrup, sugar, raw Spanish peanuts, and a dash of salt in a microwave-safe bowl. The mixture is cooked in intervals, stirring every few minutes, then enriched with vanilla, butter, and baking soda right after cooking. The baking soda helps aerate the candy, creating a brittle that's crunchy but with a slightly airy texture. You pour the mixture into a greased pan and let it cool, then break into bite-sized pieces.
The raw Spanish peanuts offer a distinct nutty flavor and texture, while the cooking method in the microwave simplifies preparation and reduces the need for constant stirring on the stovetop. This brittle can be customized by swapping in other nuts or by adding a drizzle of melted chocolate once cooled for variation in flavor and presentation.
Due to its quick cooking nature, it is recommended to make one batch at a time to ensure even cooking. The candy stores well in an airtight container and can be enjoyed as a snack or dessert addition.
Ingredients
- 1/2 cup light corn syrup
- 1 cup sugar
- 1 1/2 cups peanut raw, Spanish
- dash salt
- 1 teaspoon vanilla
- 1 tablespoon butter
- 1 1/2 teaspoons baking soda
Instructions
- Prepare a pan with nonstick cooking spray and set aside.
- Stir together light corn syrup, sugar, raw Spanish peanuts and salt in a microwave safe bowl.
- Cook on High for 7 1/2 minutes, stirring every 2 1/2 minutes. (Careful the bowl will be hot)
- Remove from microwave and add vanilla, butter and baking soda.
- Pour onto prepared pan and spread out into a thick layer.
- Allow peanut brittle to cool for 10 minutes.
- Break into pieces by hand or (preferred method) slam the pan on the counter top a few times.
- Store in an airtight container.
Notes
- Do not double the recipe as it cooks very quickly; making multiple batches separately is safer.
- Other nuts like cashews, almonds, pecans, or walnuts can replace peanuts to change the flavor.
- Melted chocolate drizzled over cooled brittle adds a special touch.
