Mini Burritos
Description
This recipe begins by browning ground beef in a skillet, then adding taco seasoning and water to infuse flavor. After cooking briefly, refried beans, salsa, and shredded cheddar cheese are stirred in to create the filling. Each large flour tortilla is cut into four wedges and filled near the wide end with about two tablespoons of the mixture.
The sides of the tortilla wedges are folded in, then rolled up towards the narrow end to form mini burritos that are placed on a baking sheet. Optionally, they can be brushed with melted butter for a crispier exterior. The burritos are baked until warmed through.
Mini Burritos make convenient appetizers or snack-sized portions for casual meals. Serving them with sour cream, guacamole, and additional salsa complements the savory filling. The dish’s texture is a warm, slightly crispy tortilla casing with a soft, cheesy, and mildly spiced inside.
They can be prepared ahead, refrigerated, and baked just before serving or quickly reheated in a microwave. Adjusting the amount of salsa or seasoning can tailor the spiciness to preference.
Ingredients
- 1 lb ground beef
- 1 (1 oz) taco seasoning mix packet
- 3 tablespoons water
- 1 (15 oz) can refried beans

Instructions
- Preheat oven to 350 degrees.
- In a large skillet, brown the beef until beef is no longer pink. Drain.
- Add the taco seasoning and 3 tablespoons of water. Stir and cook for a couple of minutes. Remove from heat and stir in the refried beans, salsa, and cheese. Feel free to add more salsa if you like it spicier.
- Quarter each flour tortilla using a knife or pizza slicer making 4 wedges from each tortilla. Spoon about 2 tablespoons of meat mixture onto the wide part of each tortilla. Fold the sides in and roll up towards the small end creating a mini burrito. Place burritos on a cookie sheet. If preparing ahead of time cover and refrigerate until serving.
- Brush burritos with melted butter if desired. Bake for 10-15 minutes or until burritos are warm. You can also just warm them in the microwave.
- Add your favorite toppings such as sour cream, guacamole, and salsa.
