Description
The Mini Egg Cookie Bars have a crust formed from graham cracker crumbs and melted butter packed into a baking pan. A glossy mixture of condensed milk blended with unsweetened cocoa powder is poured on top, setting a moist, dense chocolate layer as it bakes. After an initial bake, caramel sauce is drizzled over the surface and then scattered with mini chocolate eggs that softens slightly during a second baking period.
The final bars have a dense, chewy texture from the packed crumbs and milk mixture, enhanced by the sweet caramel and chocolate eggs offering different textures and bursts of candy flavor. Baking caramel and candy atop the bars creates a sticky, sweet top layer.
This treat is suitable for sharing at parties or as a seasonal dessert, especially around Easter due to the mini egg decorations. The bars can be cut into portions to serve and stored at room temperature covered to maintain freshness.
Using different cookies like Oreos or saltine crackers as the base can provide variety, modifying salty and sweet balance. Bars keep for a few days refrigerated to retain their texture.
Ingredients
- 3¾ cups graham cracker crumbs or 18 full sheet crackers
- 1¼ cups butter melted, or 2½ sticks, unsalted
- 1 can sweetened condensed milk 14-ounce
- 3 tablespoons cocoa powder unsweetened
- ⅓ cup caramel sauce or homemade dulce de leche sauce, store-bought
- 1 bag mini eggs 10 oz or 283 g, some chopped and some whole, Cadbury brand, for decorating
Instructions
- Heat oven to 350 degrees F (180 degrees C). Coat 13x9-inch baking pan with non-stick cooking spray and set aside.
- Combine graham cracker crumbs and butter. Press into bottom of prepared pan. In a small bowl, mix condensed milk with cocoa powder until obtaining a homogeneous mixture and pour evenly over crumb mixture, gently smoothing with the back of a spoon to distribute in an even layer.
- Bake for 15 minutes, remove from the oven, and drizzle caramel topping on top. Evenly sprinkle chocolate Cadbury's mini eggs over the whole bar and return bar to the oven. Bake for an additional 10 minutes.
- Let pan cool on a rack and cut into 12 bars -- or more if desired. Store our Easter cookie bars covered at room temperature.
