Mini M&M Christmas Cookies!

Mini M&M Christmas Cookies are small, tender cookies made from a blend of oat and coconut flours sweetened with granular and brown sugar alternatives, mixed with almond milk, melted butter, vanilla, and colorful mini M&M candies. Baked until the edges turn golden, these cookies offer a soft texture with bursts of candy sweetness, making them a festive and portion-controlled treat.

Description

This cookie dough combines oat and coconut flours for a slightly hearty but soft base, sweetened with granular and brown sugar substitutes to balance flavor and texture. Almond milk and melted butter add moisture and richness, while vanilla extract enhances the aroma. Mini M&M candies folded into the batter add bright color and chocolate bursts throughout.

The dough is portioned into tablespoon-sized scoops and baked at 350°F for 8-10 minutes, achieving gently golden edges while maintaining a tender interior. Observing baking time allows customization for softer or firmer cookies. These small cookies are suitable for holiday treats or snacks, easy to serve in small quantities.

Storing them covered at room temperature or refrigerated keeps them fresh up to one week.

Ingredients

Servings
  • 1 cup oat flour 120g
  • 2 Tbsp coconut flour 14g
  • 1/2 tsp baking soda
  • 1/4 cup granular sweetener Swerve brand, 48g
  • 1/4 cup brown sugar Swerve brand, 48g
  • 1/4 cup almond milk unsweetened, 2 Tbsp, 90g
  • 1.5 Tbsp butter melted, light, 21g
  • 1 tsp vanilla extract
  • 3 Tbsp mini m&m candies for baking, 39g

Instructions

  1. Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper and spray with nonstick cooking spray.
  2. Add the dry ingredients to a bowl; whisk until there are no clumps.
  3. Add the milk, melted butter, & vanilla. Stir until the dry ingredients are fully incorporated, then fold in the M&M’s.
  4. Use a small cookie scoop to scoop tablespoon size cookies onto the baking sheet. Bake for 8-10 minutes, or until the edges start to turn golden.
  5. Be sure to watch carefully so you don’t over-bake! If you like softer, gooier cookies, take out after 8 minutes, or when it’s just about done. It will still bake on the hot pan when removed.

Notes

  • Store cookies covered at room temperature or in the refrigerator for up to one week to maintain freshness.
