Mini Pot Pies With Leftover Stuffing

Mini Pot Pies made with leftover mashed potatoes, turkey stuffing, and gravy, topped with puff pastry, offer a convenient way to reinvent holiday leftovers. Baking in small dishes creates individual pies with layers of creamy potatoes, moist stuffing, and rich gravy enclosed under a golden, flaky pastry crust.

Description

This recipe layers mashed potatoes and turkey stuffing in a small pot pie dish or cocotte with turkey gravy dolloped between layers for moisture. The top is covered with a round of sheet puff pastry, sealed at the edges, and vented for steam. An egg wash brushes the top to help develop a shiny, golden finish.

Baked at 385°F for about 20 minutes, the puff pastry puffs up and browns nicely, contrasting flaky crust with the soft filling. These mini pot pies make a portion-sized comfort dish from leftovers.

Amounts can be adjusted depending on leftovers available. The method works similarly in regular pie dishes and yields a comforting way to repurpose cooked turkey and mashed potatoes after a meal.

Ingredients

Servings
  • 1 cup mashed potatoes leftover
  • 1 cup turkey stuffing Greek, leftover
  • ½ cup turkey gravy
  • 1 heet puff pastry

Instructions

  1. Add a tablespoon of gravy to the pot of the cocotte.
  2. Fill up half of the cocotte with mashed potatoes. Add a teaspoon of gravy on top.
  3. Fill up the rest of the cocotte with stuffing. If stuffing is too dry, add a teaspoon of gravy on top.
  4. Cut a round piece a little bigger than the pot and cover it. Press with a fork on the edges to seal it. Make a cut with a sharp knife in the middle to let steam escape.
  5. Beat the egg with one tablespoon of water. Brush top with egg wash.
  6. Bake mini pies in a 385°F oven for 20 minutes or until the pastry has puffed up and has developed a nice golden color.

Notes

  • Adjust ingredient amounts depending on your leftover quantities; the recipe is flexible.
  • Mini pies can be made in cocottes or regular pie dishes using the same layering method.
  • Use a couple of tablespoons of gravy between layers to add moisture if leftovers are dry.
  • Brushing with an egg wash before baking ensures a golden, glossy puff pastry top.
  • Baking time is about 20 minutes at 385°F or until pastry is puffed and golden.
