Mini Red Velvet Cheesecake

Ingredients

Chocolate Cookie Crust :

  • 16 Oreo cookies
  • 3 tbsp unsalted butter melted

Red Velvet Cheesecake Ingredients :

  • 2 - 8 oz cream cheese softened
  • 2 tbsp sour cream
  • ¾ C sugar
  • ¼ C cocoa powder Hershey's brand
  • 1 tsp vanilla extract pure
  • 2 tbsp red gel food coloring
  • 2 egg large

Chocolate Ganache topping

  • 1 C chocolate chips semi-sweet
  • ½ C heavy whipping cream
  • ¼ C candy canes crushed

Instructions

  1. Using a food processor, blend up the oreo cookies and the melted butter until combined and wet sand like
  2. Set aside
  3. Line a cupcake pan with white cupcake liners
  4. Using a tablespoon, scoop the crust into the cupcake liners
  5. Using a flat bottomed cup or measuring cup, press the crust down firmly
  6. Set aside
  7. CHEESECAKE Directions :
  8. Preheat oven to 350 degrees
  9. Using a hand mixer, beat the cream cheese, sour cream, sugar and cocoa until combined
  10. Beat in the vanilla until combined
  11. Beat in the eggs, one at a time until combined
  12. Beat in the Red Gel Food coloring until combined
  13. Scoop about 1 ½ tbsp of the cheesecake batter into the cupcake liners
  14. Bake in the oven for 20-22 minutes or until the top is firm
  15. Remove from oven and allow to cool to room temperature
  16. Once cooled, place in the fridge overnight
  17. Ganache Directions
  18. Using a medium pot, bring the heavy whipping cream to a simmer
  19. Pour the chocolate chips into a medium bowl, pour the heavy cream over the chocolate chips
  20. Let sit for 2 minutes and then mix until smooth and combined
  21. Remove the cheesecakes from the fridge
  22. Scoop 1 tbsp of the chocolate ganache on top of the cheesecakes and smooth evenly with a butter knife
  23. Sprinkle crushed candy canes on top
  24. Enjoy!
