Mint Brownies

Mint Brownies combine a fudgy boxed brownie base with a smooth mint-flavored frosting and a glossy chocolate topping. The frosting blends powdered sugar, softened butter, mint extract, milk, and green coloring to create a creamy, aromatic layer. A melted chocolate and butter glaze finishes the dessert with rich, semi-sweet contrast. Chilling allows the layers to set for easy slicing.

Description

This recipe starts with preparing brownies from a Betty Crocker fudge box mix, baked in a 9x13 pan. After cooling, a mint frosting made from powdered sugar, softened butter, mint extract, milk, and a few drops of green food coloring is spread over the top. The frosting imparts a cool, refreshing mint flavor with a smooth texture.

A melted mixture of semi-sweet chocolate chips and butter is then poured over the mint layer, adding a rich, glossy chocolate coating. The brownies chill for at least an hour to firm the layers, then sit briefly at room temperature before cutting. The combination delivers a dense, fudgy brownie with a minty cream center and a rich chocolate shell.

Brownies are stored in an airtight container in the refrigerator to maintain freshness and can be frozen individually wrapped for longer storage.

Ingredients

Servings
  • 1 (16.3-ounce) box brownie mix plus ingredients on the box, Betty Crocker fudge
  • 2 cups powdered sugar
  • ½ cup butter softened
  • 2 tablespoons mint extract
  • 2-3 drops green food coloring
  • 1 tablespoon milk
  • 6 tablespoons butter
  • 2 cups chocolate chips semi-sweet

Instructions

  1. Preheat your oven to 350°F and line a 9x13 dish with parchment paper and lightly grease.
  2. Make brownies as instructed on the box and bake in the baking dish.
  3. Beat the powdered sugar, butter, mint extract, food coloring and milk until smooth in a medium bowl. Spread evenly over the cooled brownies (we add dollops all over the top to make it easier to spread).
  4. In a microwave-safe bowl, melt chocolate chips and butter until smooth. Spread over the mint layer, cover, and chill for at least 1 hour.
  5. Let set out for 20-30 minutes before cutting into squares.

Notes

  • Box brownie mixes require additional ingredients like water, vegetable oil, and eggs as specified on the box.
  • Store brownies airtight in the refrigerator for 4-5 days.
  • Freeze individually wrapped brownies in freezer bags for up to 3 months.
