Mint Chocolate Brownie Energy Bites

Mint Chocolate Brownie Energy Bites blend dates, walnuts, peanut butter, oats, cocoa powder, and melted Andes mints to form small, nutrient-dense, no-bake snacks. The bites have a chewy texture with chocolate and mint flavor enhanced by drizzled chocolate and optional flaky sea salt. Freezing firms them for easy portioning and storage.

Description

The recipe starts by melting a portion of Andes mints with coconut oil to create a smooth mint chocolate base. Chopped walnuts are pulsed to a crumbly texture, then combined with pitted dates processed into a paste, providing natural sweetness and binding. Additional ingredients like peanut butter, cocoa powder, quick oats, vanilla, honey, and salt are blended until a dough forms, rich in chocolate and mint notes with a wholesome texture from nuts and oats.

Shaping the mixture into balls and freezing briefly firms them for handling. The final touch is drizzling melted remaining Andes mints over the chilled bites, adding a decorative and flavorful finish, enhanced optionally by flaky sea salt for contrast. Stored in an airtight container and chilled, these bites offer a convenient energy boost with a balance of sweet, nutty, and minty flavors without baking.

They serve well as portable snacks throughout the day or pre/post-workout treats. The natural sweeteners and wholesome ingredients make them suitable for those seeking alternatives to processed snacks while enjoying a dessert-like flavor.

Ingredients

Servings

Ingredients

  • 8 Medjool dates pitted and chopped
  • 20 Andes mints ~1/4 cup melted, divided
  • 1 cup walnuts pulsed
  • 1/2 cup peanut butter creamy
  • 1/3 cup cacao powder
  • 1/3 cup quick oats or oat flour
  • 2 Tbsp. coconut oil melted; plus 2 tsp. more for melting Andes mints
  • 1 tsp. vanilla extract can substitute mint or peppermint extract for an even more minty flavor
  • 1 tsp. honey optional for a touch of sweetness
  • 1/4 tsp. salt
  • flaky sea salt optional

Instructions

  1. Melt 10 Andes mints with 1 tsp. coconut oil in a microwave safe bowl for ~30 seconds or until smooth. Set aside.
  2. Pulse walnuts in a food processor until crumbly. Set aside. Wipe food processor clean.
  3. Add chopped Medjool dates to the bowl of a food processor and process until somewhat of a paste forms.
  4. Turn machine off and add in the chopped walnuts, cocoa powder, oats, peanut butter, melted Andes mints, coconut oil, honey, vanilla and salt. Process again until a dough forms.
  5. Use a cookie scoop to portion out the bites and roll mixture into a ball. Place bites on a parchment paper lined baking sheet and freeze for 10 minutes to allow balls to harden a bit.
  6. Melt the remaining chocolate mints and 1 tsp. coconut oil in the microwave. Drizzle chocolate on top of chilled energy bites. (top with flaky sea salt, optional)
  7. Enjoy right away or store in an airtight container in the fridge for up to 1 week.

Notes

  • If dates are firm, soak them in warm water for about 10 minutes to soften before processing.
  • Warm peanut butter slightly if it’s too thick, to help mixing and smooth texture.
  • Store the energy bites in an airtight container in the fridge for up to one week.
  • To extend storage, place bites in a freezer-safe bag and freeze for up to two weeks.
