Mint Chocolate Brownies Recipe
Description
The brownies are prepared by mixing a triple chocolate brownie mix with water, vegetable oil, egg, and peppermint extract to infuse mint aroma. Baking in an 8x8 inch pan results in a fudgy texture with gooey centers when baked just until a toothpick comes out mostly clean. Cooling the brownies fully before frosting preserves their dense texture.
The frosting incorporates vanilla frosting base with softened butter, salt, additional peppermint extract, and optional green food coloring to intensify the holiday or mint theme. Chilling the frosting before spreading helps it set for cleaner slices. The frosting adds sweetness and a fresh contrast to the rich chocolaty base.
These brownies suit occasions where a mint chocolate combination is desired and are straightforward to prepare using common boxed mixes and few added ingredients. They cut into classic squares and freeze well for make-ahead treats.
Store at room temperature in an airtight container for several days, refrigerate to extend freshness up to a week, or freeze for longer storage. Adjust the peppermint extract to taste for more or less mint presence.
Ingredients
For the Brownies
- 18 ounces brownie mix 1 box, triple chocolate
- ¼ cup water
- ½ cup vegetable oil
- 1 large egg
- 1 tablespoon peppermint extract
For the Frosting
- 32 ounces vanilla frosting (2 containers)
- 2 tablespoons butter room temperature (¼ stick, unsalted
- ⅛ teaspoon kosher salt
- 1 tablespoon peppermint extract
- 5 drops green food coloring optional
Instructions
For the Brownies
- Preheat oven to 350°F. Spray an 8x8-inch baking dish evenly with nonstick spray. Set aside.
- Mix the brownie mix, water, vegetable oil, egg, and peppermint extract in a large bowl.
- Pour brownie batter into the greased dish. Bake for about 25 minutes, turning the dish around halfway through cooking time. Brownies are done when an inserted toothpick comes out mostly clean. They will be a little fudgey and you don’t want to overcook them.
- Allow brownies to cool fully before frosting.
For the Frosting
- In a large bowl, combine the vanilla frosting, butter, salt, and peppermint extract. Mix well.
- Add the green food coloring, 2 drops at a time, until you have reached the desired color of green (I used about 5 drops total) Place frosting in the refrigerator to thicken up for about 10 minutes.
- Frost the brownies, cut into slices, and serve.
Notes
- Store mint chocolate brownies at room temperature for up to 3 days, refrigerated for up to 1 week, or frozen for up to 3 months in airtight containers.
- Do not overbake the brownies to maintain fudgy centers; test with a toothpick that comes out mostly clean.
- Refrigerate the frosting briefly before spreading to help it firm up and make frosting easier to apply.
