Mint Chocolate Chip Cookies

These mint chocolate-chip cookies are one of my family’s favorite! They are delicious and simple to make! The green color comes from food coloring which can be omitted if desired. Enjoy!

Ingredients

  • ¾ cup unsalted butter softened
  • ½ cup granulated sugar
  • ½ cup light brown sugar lightly packed
  • 1 egg large
  • 1 ½-2 teaspoons peppermint extract not mint extract
  • green food coloring optional
  • 4 tablespoons cocoa powder unsweetened
  • 1 ½ all-purpose flour
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • ¾ cup milk chocolate chips or semi-sweet
  • ¾ cup baking chips Andes creme de Menthe flavor

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit. Line 2 baking sheets with parchment paper and set aside.
  2. Add ¾ cup softened unsalted butter, ½ cup granulated sugar, and ½ cup lightly packed light brown sugar to a large bowl and beat with a hand mixer or a stand mixer fitted with the paddle attachment until light and fluffy, about 3 minutes.
  3. Add 1 large egg, 1 ½-2 teaspoons peppermint extract, and green food coloring, if desired. Beat until combined.
  4. Add 4 tablespoons unsweetened cocoa powder, 1 ½ all-purpose flour, 1 teaspoon baking soda, and ¼ teaspoon salt and mix until combined.
  5. Stir in ¾ cup milk chocolate chips, and ¾ cup Andes creme de menthe baking chips by hand.
  6. Scoop the dough into 2-tablespoon portions and roll them into uniform balls. Place the dough balls on the prepared baking sheets, leaving 2 inches between them.
  7. Bake for 7-8 minutes, or until the edges are set and just barely beginning to brown. Remove the cookies from the oven and allow them to cool on the baking sheet for about 2 minutes before transferring to a cooling rack to finish cooling.
