Description
Minted New Potatoes are prepared by simmering whole new potatoes gently in salted water until they are uniformly tender yet not falling apart. After draining, the potatoes rest covered to allow excess moisture to evaporate, enhancing their ability to absorb butter. Butter is then tossed through warm potatoes to coat evenly, followed by the addition of fresh chopped mint for aroma and flavor. Seasoning with kosher salt and white pepper completes the dish by bringing subtle seasoning that enhances the natural flavors of the potatoes and herbs.
This preparation keeps the skins intact, offering a lightly textured exterior and creamy interior. The mint provides a bright contrast to the richness of butter and the earthiness of the potatoes. This side dish pairs well with roasted meats, grilled fish, or simply alongside a fresh salad.
Ingredients
- 2 pounds new potatoes scrubbed clean
- 4 Tablespoons butter unsalted
- 2 Tablespoons mint chopped, fresh
- 2 teaspoons kosher salt
- 1 teaspoon white pepper
Instructions
- Place new potatoes in a large sauce pan with cold water and cover by 1 inch.
- Bring to a boil, then reduce heat and gently simmer covered, for approximately 15 minutes, or until a knife inserted in the largest potato comes is easily pierced and slightly tender. Test a few potatoes if they are very different in size. Don't over-cook. (Time will vary depending on the size of the potatoes)
- Remove from heat, drain water, then re-cover the pot and let the potatoes "dry out" a bit, covered for about 5 minutes.
- Toss with butter until it's completely melted. Toss with fresh mint. Season with salt and pepper.
