Description
This Minty Iced Matcha Latte is prepared by blending high-quality matcha powder with fresh mint leaves, lightly sweetened with a pitted date and balanced with a pinch of sea salt. Coconut milk adds a creamy texture, while water adjusts the consistency. The blending process ensures a frothy and smooth drink without gritty matcha particles. Adjusting the amount of mint, matcha, and sweetness allows customization of the flavor balance.
The matcha gives an earthy, tea-like quality combined with a fresh, bright mint taste, complementing the creaminess provided by the coconut milk. - 1 large date if sugar-free, try subbing stevia to taste, medjool, pitted
- 1/2 cup coconut milk canned, organic is best, light
- 2/3 cup water
- 1 pinch salt sea salt

Instructions
- To a small blender add pitted date, light coconut milk, water, sea salt, matcha powder, and mint leaves. Blend on high until creamy and smooth.
- Taste and add more mint for minty flavor, matcha for tea/grassy flavor, or a bit more date for more sweetness. Blend again to combine.
- Serve over ice and garnish with more fresh mint (optional). Best when fresh. Store leftovers covered in the refrigerator for up to 24 hours (vibrant green hue will fade a bit). Not freezer friendly.
