Mirin-Glazed Salmon

Mirin-Glazed Salmon is cooked by quickly marinating salmon fillets in a sweet and savory mixture of mirin, brown sugar, and soy sauce, then pan-seared and finished with a tangy rice vinegar glaze. The short marinating time and cooking method create a caramelized exterior boasting balanced sweetness and umami, complemented by the subtle acidity of rice vinegar.

Description

This recipe for Mirin-Glazed Salmon uses a marinade of mirin, light brown sugar, and soy sauce to impart a mildly sweet and salty glaze. The salmon fillets marinate briefly—just 3 minutes on one side and 2 on the other—enough to absorb the flavors without overpowering the fish. Cooking the salmon briefly in a hot dry skillet creates a nicely seared surface, then adding the marinade back into the pan lets it reduce slightly around the fish.

After cooking, rice vinegar is added to the pan to create a bright, tangy glaze that contrasts with the sweetness of the mirin and sugar. Pouring this over the salmon enhances its moist texture and layers of flavor. The glazing technique highlights the balance between sweet, salty, and acidic elements in the dish.

The salmon pieces can be served simply as a main course, possibly garnished with scallions or similar greens as suggested, to complement the glaze. Its quick preparation and strong flavor profile make it suitable for an easy yet distinctive fish dinner that pairs well with steamed vegetables or rice.
