Miso Marinated Fish

Miso Marinated Fish features black cod or a fatty fish marinated in a sweet and savory mixture of miso, agave or sugar, and mirin. The marinade imparts umami richness, while broiling cooks the fish quickly to a golden, caramelized exterior with a tender interior. The recipe’s short marinade time allows for flexibility, but longer marinating develops deeper flavor complexity.

Description

This recipe uses yellow or white miso combined with agave syrup (or sugar) and mirin to create a glaze that the fish soaks in. The oily fish such as black cod is coated and refrigerated for at least 30 minutes, though it can marinate up to three days to intensify flavors. Broiling under high heat caramelizes the surface, producing a slightly crispy, bubbly glaze while retaining moistness inside.

The result is a fish with a layered taste of salty, sweet, and tangy notes, enhanced by the marinade’s fermented character. The quick broil method quickly cooks the fish, preventing drying and maintaining a tender, flaky texture. The golden glaze adds visual appeal and complex flavor.

Serve this fish as a main dish paired with simple sides or steamed rice that complements the robust marinade.

Ensure the broiler is fully preheated for ideal caramelization. Removing excess marinade before broiling prevents burning and promotes even cooking.
