Description
The recipe involves cooking whole button mushrooms in neutral oil over medium-high heat until deeply browned, about 15 minutes, bringing out their natural flavor and moisture. Simultaneously, a miso butter is prepared by blending softened butter with miso paste and finely minced garlic, which provides a creamy, savory coating for the mushrooms.
Once the mushrooms have cooked, the miso butter is stirred in and cooked briefly to combine. A finishing drizzle of sesame oil adds aroma and subtle nuttiness. The dish combines smooth richness from the butter and miso with the tender, juicy mushrooms, resulting in an umami-forward side.
There is no need to trim mushroom stems, simplifying preparation. Both brown and red miso varieties work well, providing flexibility depending on availability and flavor preference.
Ingredients
- 1 tablespoon neutral cooking oil generic cooking oil
- 2 lbs. button mushroom see notes, or crimini mushrooms
- 3 tablespoons butter vegan butter, if needed, softened
- 2 tablespoons miso paste gluten-free, if needed
- 2 cloves garlic very finely minced
- 1 teaspoon sesame oil
Instructions
- Heat the oil in a large frying pan over medium-high heat. Add the mushrooms and cook, stirring occasionally, until the mushrooms are brown all over, about 15 minutes.
- While the mushrooms are cooking, make the miso butter. Mix the softened butter with the miso paste and garlic cloves.
- When the mushrooms are cooked, add the miso butter to the pan and cook the mushrooms for two minutes more. Drizzle the sesame oil over the mushrooms and serve right away.
Notes
- Wash mushrooms whole and cook as is; no need to trim the stems.
- Both brown and red miso pastes have been tested and work well for the miso butter.
