Miso Wonton Soup
Description
This soup is made by simmering chicken broth and water, adding mini wontons which cook in just a few minutes. Miso paste is then stirred in to enrich the broth with its characteristic savory and slightly salty flavor. Fresh vegetables such as thinly sliced baby bok choy, scallions, and paper-thin carrots are added toward the end and gently simmered to retain their crisp-tender texture.
The resulting broth carries the combined umami notes of the miso and chicken stock, blending harmoniously with the tender dough of the wontons and the mild crunch of the vegetables. The simplicity of the ingredients allows each component to shine through, making it a comforting and balanced soup option.
Miso Wonton Soup is best served hot and can function as a light meal or starter. The quick cooking of wontons and vegetables makes it relatively fast to prepare. Stirring in the miso at the end prevents overcooking and preserves its flavor.
Ingredients
- 28 oz chicken broth about 3 1/2 cups
- 2 cups water
- wonton wrapper about 16-20 mini
- 2 Tbsp miso paste I used yellow
- 1 baby bok choy thinly sliced
- 6 scallions thinly sliced, white and some of the green parts, too
- 1 carrot sliced paper thin (use the 1/8 inch setting on a mandoline slicer)
Instructions
- Heat the broth and water to a simmer in a saucepan. Add the wontons and simmer gently until they are heated through, this will just take a few minutes.
- Add the miso to the soup and stir until dissolved. Add the veggies and bring the soup back to a simmer.
- Serve hot.
