Description

Ingredients
- 3-4 lb. chuck roast
- 1 ounce packet ranch powder (Hidden Valley)
- 1 ounce au jus gravy mix packet
- 8 Pepperoncini peppers (jarred)
- 1/2 cup butter (unsalted or salted, see notes)

Instructions
- Place the chuck roast in the crockpot. Sprinkle ranch powder and au jus gravy mix all over the beef roast.
- Place pepperoncinis on top of the roast. Place a stick of butter on the top of the peppers.
- Put the lid on and set it on the low setting. Cook for 8-9 hours. Do NOT open the lid to check on the roast until it has cooked for at least 8 hours on low. This roast may be cooked on high for 5 hours but I wouldn't suggest it as it won't be as tender.
- Shred the beef with two forks. Taste for seasonings and add salt and pepper, if needed. Serve with the gravy on top of mashed potatoes.
Notes
- Chuck roast is ideal for tender results; bottom round can be used as an alternative.
- Slow cook on low for 8-9 hours for best tenderness; high setting for 5 hours yields firmer texture.
- Searing the roast before slow cooking can deepen flavor but is optional.
- Au Jus Gravy Mix is a key seasoning, available as a packet; brown gravy mix can substitute.
