Mississippi Pot Roast

Mississippi Pot Roast is a slow-cooked beef chuck roast seasoned with ranch powder, au jus gravy mix, pepperoncini peppers, and butter. The roast cooks low and slow in a crockpot until tender enough to shred. The combination of seasoning packets and peppers creates a flavorful, savory, and slightly tangy braise that softens the beef extensively.

Description

This recipe starts by placing a 3 to 4-pound chuck roast in a slow cooker and seasoning it with ranch powder and au jus gravy mix packets, which bring a blend of herbs, spices, and savory umami flavors. Jarred pepperoncini peppers are added, providing mild heat and tanginess alongside butter that melts during cooking to enrich the sauce. The roast cooks on low heat for 8 to 9 hours, breaking down connective tissue for a tender, shreddable texture.

Once done, the beef is shredded with forks and served with the flavorful juices spooned over mashed potatoes or other sides. The au jus and ranch seasoning create a complex but easy flavor profile without elaborate preparation.

For those interested, searing the roast briefly before slow cooking can add additional flavor but is not required. Using unsalted or salted butter adjusts sodium levels according to preference. Using the slow cooker maintains moistness and develops a rich sauce suitable for hearty meals.

Ingredients

Servings
  • 3-4 lb. chuck roast
  • 1 ounce packet ranch powder (Hidden Valley)
  • 1 ounce au jus gravy mix packet
  • 8 Pepperoncini peppers (jarred)
  • 1/2 cup butter (unsalted or salted, see notes)
  • salt optional
  • black pepper optional

Instructions

  1. Place the chuck roast in the crockpot. Sprinkle ranch powder and au jus gravy mix all over the beef roast.
  2. Place pepperoncinis on top of the roast. Place a stick of butter on the top of the peppers.
  3. Put the lid on and set it on the low setting. Cook for 8-9 hours. Do NOT open the lid to check on the roast until it has cooked for at least 8 hours on low. This roast may be cooked on high for 5 hours but I wouldn't suggest it as it won't be as tender.
  4. Shred the beef with two forks. Taste for seasonings and add salt and pepper, if needed. Serve with the gravy on top of mashed potatoes.

Notes

  • Chuck roast is ideal for tender results; bottom round can be used as an alternative.
  • Slow cook on low for 8-9 hours for best tenderness; high setting for 5 hours yields firmer texture.
  • Searing the roast before slow cooking can deepen flavor but is optional.
  • Au Jus Gravy Mix is a key seasoning, available as a packet; brown gravy mix can substitute.
  • Butter adds richness; use unsalted to control sodium if desired.
