Mixed Berry Buckle Recipe

The Mixed Berry Buckle combines assorted fresh berries into a lightly sweetened batter that bakes into a tender cake with a golden, lightly crisp topping. The recipe uses buttermilk, applesauce, and brown sugar for moistness and subtle sweetness. The topping's extra sugar caramelizes for a slight crunch, balancing the soft berry-studded crumb.

Description

This recipe features a simple batter made from all-purpose flour, baking powder, baking soda, salt, buttermilk, melted butter, brown sugar, applesauce, eggs, and vanilla. Mixed berries, including blueberries, raspberries, and blackberries, are gently folded into the batter to distribute fruit pockets throughout. The blend is poured into a greased 9-inch round pan and topped with additional brown sugar before baking at 350°F for 40 to 45 minutes.

The baked buckle yields a cake with a moist interior and a soft crumb that carries bursts of berry tartness. The brown sugar topping caramelizes slightly in the oven, adding a delicate crispness to the surface. The buttermilk and applesauce contribute to the tender texture without overwhelming sweetness.

This dessert is best served warm soon after baking to enjoy the fresh berry flavors and tender consistency. It pairs well with a cup of tea or coffee and can be a comforting, fruit-based treat in any season.

Ingredients

Servings
  • cooking spray nonstick
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 1/2 cup buttermilk low-fat
  • 2 tablespoons butter melted
  • 1/2 cup light brown sugar plus 1 tablespoon light brown sugar (3.5 oz, packed
  • 1/2 cup applesauce unsweetened
  • 2 large egg
  • 1 teaspoon vanilla extract
  • 3 1/2 cups mixed berries an equal mix of blueberries, raspberries, blackberries, fresh

Instructions

  1. Preheat the oven to 350 degrees. Spray a 9-inch round baking pan with cooking spray. Line the bottom with parchment and spray the parchment.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. In a medium bowl, whisk together the buttermilk, melted butter, sugar, applesauce, eggs, and vanilla until smooth. Pour the wet ingredients into the dry and gently fold to just barely combine—some lumps are ok and be careful not to overmix.
  4. Gently fold in the berries, again, just until combined and a few lumps remain.
  5. Spread the batter into the prepared pan into an even layer. Sprinkle the remaining sugar evenly over the surface.
  6. Bake until the top is golden and a toothpick inserted into the center comes out clean of batter, 40 to 45 minutes. Serve warm.

Notes

  • Enjoy the buckle fresh and warm for best texture and flavor.
