Mixed Berry Cobbler
Description
The recipe begins with coating a variety of fresh berries in sugar, cornstarch (adjusted if berries are frozen), lemon zest, lemon juice, and vanilla extract. This mixture is gently spread in a prepared baking dish to create a juicy base. The cobbler topping consists of all-purpose flour mixed with granulated and brown sugar, lemon zest, baking powder and soda, and fine sea salt. Cold butter is cut into the dry ingredients until coarse crumbs are formed, then buttermilk is stirred in to bind the dough.
The batter is placed over the berry filling and baked at 350°F until the topping is golden and the filling bubbly. The contrast between the tart berry filling and the soft, sweetened crust makes for a satisfying texture combination. The dessert can be served with cold buttermilk and decorator's sugar as garnish.
This cobbler stores well in the refrigerator for up to five days, and leftovers freeze for up to three months in airtight containers. It can be customized by using any mix of berries totaling about eight cups and adding optional flavor extracts. Serving with ice cream, whipped cream, or custard complements the warm fruit and crust.
Ingredients
Mixed Berry Filling
- 2 ½ cups blueberries
- 2 ½ cups raspberry
- 1 ½ cups blackberry
- 1 ½ cups strawberries sliced
- ½ cup sugar
- 2 ½ TBS cornstarch 3 if using frozen berries
- lemon zest of half
- 1 tsp lemon juice fresh squeezed
- 1 tsp vanilla extract
Cobbler Topping
- 1 ¼ cups all-purpose flour
- ¼ cup granulated sugar
- 2 TBS light brown sugar lightly packed
- lemon zest of half
- 1 ¼ tsp baking powder
- ¼ tsp baking soda
- ¼ tsp salt fine sea salt
- 6 TBS butter cold, dice into cubes or grated, unsalted
- ⅓ cup buttermilk cold
Garnish
- 1 TBS buttermilk optional garnish, cold
- 1 TBS decorator's sugar optional garnish
Instructions
- Preheat the oven to 350 degrees and spray a 9×3 baking dish with non-stick cooking spray then set it aside.
Berry Filling
- Combine the berries with the sugar, cornstarch, lemon zest, lemon juice, and vanilla extract in a medium bowl. Gently stir with a silicone spatula until the berries are coated in the mixture.
- Spread the berry mixture gently into the bottom of the baking pan.
Cobbler Topping
- In a large bowl, combine the flour, sugar, brown sugar, lemon zest, baking powder, baking soda, and salt. As you’re mixing, make sure to break up any clumps of brown sugar so it becomes on smooth mixture.
- Toss the dry ingredients with the butter then use a pastry cutter (or a fork) to cut the butter until the pieces of the mixture are like coarse crumbs or about the size of a pea.
- Add 1/3 cup of the buttermilk and stir it until together well combined. It’ll be sticky and wet so don’t worry if it slightly sticks to your fingers, it’s totally normal.
- Use your fingers to take a couple of tablespoons of dough and gently flatten it out so it’s about 1/4 of an inch thick. Then place the piece of dough on top of the berries. Repeat this process for the rest of the dough.
Garnish
- Brush the tops of the dough with the buttermilk you set aside earlier using a pastry brush and sprinkle with the decorator’s sugar.
- Bake for 45-50 minutes or until the topping is golden brown and the berries are hot and bubbly in the exposed spaces. If you aren’t quite sure if the topping is done, you can do the poke a toothpick in it and see if it comes out clean trick.
- Let the mixed berry cobbler cool for about ten minutes before serving then enjoy alone or with a scoop of vanilla ice cream.
Notes
- Customize the flavor by adding 1/2 teaspoon of extracts like almond, strawberry, orange, or lemon to the filling.
- Store leftover cobbler covered in an airtight container in the refrigerator for up to five days.
- Freeze leftover portions in airtight, freezer-safe containers for up to three months; portioning is recommended for easy reheating.
- Use any combination of berries totaling eight cups; omit blackberries if seeds are a concern for guests.
- Top with ice cream, homemade whipped cream, caramel sauce, creme anglaise, or sweetened vanilla yogurt based on preference.
