Mixed Berry Crisp
Description
Mixed Berry Crisp combines six cups of mixed berries with flour, lemon zest, and sugar to create a sweet and slightly tangy fruit base. The crisp topping consists of brown sugar, oats, coconut flakes, softened salted butter, flour, chopped pecans, and cinnamon that, when baked, develops a crunchy texture with nutty and cinnamon-spiced notes. Together, the filling and topping balance juicy fruitiness with a crunchy, buttery finish.
The berries are baked at 375°F until hot and bubbling, signaling the fruit juices have thickened and flavors melded. Cooling briefly before serving allows the crisp to set. Pairing it with vanilla ice cream adds creaminess to complement the warm, textured dessert, enhancing the eating experience.
This recipe can be made with frozen berries if the cooking time is increased by about 15 minutes and an extra tablespoon of flour is added to help thicken juices. To prevent the topping from over-browning, loosely covering it with foil partway during baking is advised. The fruit crisp topping can also be prepared in advance and frozen for convenience, ready to be sprinkled over fruit for an easy dessert when desired.
Ingredients
- 6 cups mixed berries fresh or frozen, do not thaw
- 4 tablespoons all-purpose flour
- 1 teaspoon lemon zest
- ¼ cup granulated sugar
Topping
- ½ cup brown sugar
- ½ cup oats
- ½ cup coconut flakes
- ¼ cup butter softened, salted
- ¼ cup all-purpose flour
- ¼ cup pecans optional, chopped
- ½ teaspoon cinnamon
Instructions
- Preheat the oven to 375°F.
- In a 2 quart baking dish combine berries, flour, lemon zest and sugar.
- In a medium bowl, combine brown sugar, oats, coconut, butter, flour, chopped pecans if using, and cinnamon until well mixed. Sprinkle topping over berries.
- Bake for 30 to 35 minutes or until the berries are hot and bubbling.
- Cool for at least 10 minutes before serving. Serve with vanilla ice cream if desired.
Notes
- When using frozen berries, increase baking time by 15 minutes and add 1 tablespoon extra flour to thicken the filling.
- If the topping browns too quickly, cover loosely with foil during baking to prevent burning.
- Make ahead and freeze multiple batches of the topping to use readily on fresh or frozen fruit for quick desserts.
