  • 1 inch pie crust homemade or store-bought frozen

for the berry filling-

  • 20 oz. mixed berries two 10 oz packages) I used Simple Truth Organic brand, frozen
  • 1 teaspoon vanilla extract
  • 1/2 cup granulated sugar
  • 1/4 cup all-purpose flour

for the streusel topping-

  • 1 cup all-purpose flour
  • 1/3 cup granulated sugar
  • 1/3 cup brown sugar
  • 1/2 cup rolled oats
  • 6 tablespoons butter softened
  • 1/4 teaspoon salt

Instructions

  1. Preheat oven to 350° F.
  2. If using frozen pie crust, remove from freezer and set aside. If using homemade pie crust, keep refrigerated until ready to fill.
  3. In a large bowl, stir frozen berries, vanilla extract, sugar, and flour until well coated. Pour into pie crust and even out the top.
  4. In another separate bowl, measure out streusel ingredients. Using your hands, mix the streusel until it comes together and the butter is well incorporated throughout and everything is like moist sand. Spread 3/4 of the streusel over the frozen berries.
  5. Bake pie for 1 hour or until crust and topping are golden brown. Cool completely before cutting and serving. Serve with whipped cream or vanilla ice cream.

Notes

  • The streusel topping quantity is quite ample; you may use about half if you prefer a lighter covering on the pie.
