M&M Cookie Bars

M&M Cookie Bars use a vanilla cake mix combined with eggs and melted butter to create a soft, chewy base studded with colorful M&M's. Baked in a square pan and cooled before cutting, the bars offer a tender texture with bursts of chocolate and candy coating. The inclusion of cake mix simplifies preparation, making these bars a convenient treat for casual snacking or parties.

Description

The M&M Cookie Bars recipe starts by blending vanilla cake mix with eggs and melted butter to form a smooth dough. M&M's are folded in to provide bright spots of chocolate and candy crunch throughout. Spreading the dough in a prepared 9x9-inch pan and baking until golden ensures a tender interior and slightly crisp edges.

Cooling the bars properly before slicing helps them hold their shape, while parchment paper edges allow easy removal from the pan. The bars can also be made in a larger pan, resulting in thinner layers with adjusted baking time. This simple method offers a quick way to bake colorful, soft cookie bars that can be enjoyed as is or with milk.

Ingredients

Servings
  • 1 box vanilla cake mix
  • 2 egg large
  • 1/2 cup (1 stick) butter melted, unsalted
  • 2 cups M&M's

Instructions

  1. Preheat oven to 350 degrees F. Spray a 9x9-inch pan with nonstick spray. Cover bottom with parchment paper in a way that overhands on two sides, for easy cookie bars removal.
  2. In a large bowl, stir the first three ingredients together until well combined. Add M&M's and stir until well combined.
  3. Spread and pat the cookie dough in the pan. Level the top with a spatula.
  4. Bake for about 25-35 minutes or until golden brown. A toothpick inserted in the center should come out clean, or just a few crumbs, but not raw batter.
  5. Let the cookie bars cool before cutting, as cooling will allow them to firm a bit.
  6. Using the parchment paper handles, lift the cookie from the pan and cut into bars.

Notes

  • You can use a 9x13 inch pan to make thinner cookie bars; baking time will be about 20 minutes in that case.
