Mocha Brownie Trifles

This mocha brownie trifle layers bite-sized brownies, mocha pudding, toffee bits, and whipped cream to create a rich, textured dessert. The pudding is flavored with coffee or milk, adding depth to the sweet vanilla base. Assembling the trifle in individual portions makes it convenient for serving. The dessert can be prepared a day ahead to allow flavors to blend and the textures to meld without losing freshness.

Description

Mocha Brownie Trifles start with homemade or boxed brownies cut into small cubes, which serve as a dense, chocolatey base for the dessert. The mocha pudding is prepared by combining vanilla pudding mix with milk reduced by ¼ cup and substituting this with cooled black coffee to introduce a subtle coffee flavor, or using all milk if preferred.

In individual serving containers, the brownies are layered alternately with toffee bits, mocha pudding, and whipped cream, creating a dessert with contrasting textures: the fudgy brownie cubes, creamy pudding, crunchy toffee, and airy whipped topping.

The trifles can be assembled up to one day in advance, allowing the flavors to meld while maintaining their distinct layers. The dessert is suitable for casual entertaining or as a make-ahead indulgence that combines chocolate and coffee notes without complexity.

Ingredients

Servings
  • 1 box brownie mix (prepared according to package directions, or 1 batch of homemade brownies, PLUS ingredients required to prepare brownies)
  • 1 package vanilla pudding mix (PLUS the milk measurement required LESS ¼ cup of milk (vanilla pudding mix that makes 4 serving is recommended))
  • ¼ cup black coffee or ¼ cup milk, cooled
  • 2 cups Whipped Cream (Cool Whip or prepared Dream Whip)
  • ½ cup Toffee bits (or 2 crushed Skor chocolate bars)

Instructions

  1. If using store-bought brownie mix, prepare brownie mix according to package directions. If making homemade brownies, prepare and bake them following recipe. Allow the brownies to fully cool at room temperature for 20-30 minutes. Once cooled cut into small bite sized cubes (approximately 1"-2" cubes).
  2. Prepare the mocha pudding. In a large bowl add the vanilla pudding mix. Per the vanilla pudding mix package directions, add the required milk measurement LESS ¼ cup of milk per package (i.e. 1 package of vanilla pudding mix that serves 4 requires 2 cups of milk, only add 1 ¾ cups of milk). Add in the cooled coffee (if using, or ¼ cup of milk instead). Mix until evenly combined. Set aside.
  3. If using Dream Whip, prepare 1 packet according to package directions.

Assemble the Trifle

  1. To make individual servings, in 12 ramekins, mugs, small bowls, or mason jars, layer the cubed brownies, toffee bits, mocha pudding and whipped cream (save 3-4 cubed brownies and 1 teaspoon of toffee bits to decorate the top). Depending on the size of the ramekins create 2-3 layers. On top the layer the reserved toffee bits and brownies to garnish.
  2. To make one large trifle use a trifle bowl or large bowl. Split the cubed brownies into thirds (save 3-4 cubed brownies for decorating the top). Add the first layer of brownies to the bowl, one third of the toffee bits (save 1 tablespoon for decorating the top), one third of the mocha pudding and one third of the whipped cream. Repeat to create 2 more layers. Decorate the top of the trifle with the reserved brownies and toffee bits.
  3. Store the prepared trifle in the fridge until ready to serve. Enjoy!

Notes

  • This dessert can be prepared up to one day in advance to allow flavors to marry.
  • If using store-bought brownie mix, prepare and cool brownies completely before assembling.
  • Coffee adds depth to the pudding but can be substituted with milk for a milder flavor.
  • Individual serving dishes make the trifle easy to portion and serve.
