Mocha Eggnog Trifles
Description
The recipe assembles moist trifles by soaking pieces of cake or ladyfinger cookies in a blend of brewed coffee and eggnog liqueur. A whipped cream mixture sweetened with sugar is lightly flavored with coffee and eggnog, with part of it mixed with cocoa powder to create a mocha cream layer. These components are layered alternately in glasses, finishing with a cocoa-flavored cream layer decorated with chocolate sprinkles and coffee bean toppings.
Chilling the desserts for several hours or overnight allows the soaked cake to absorb the liquid thoroughly, yielding a tender, rich dessert that combines coffee and eggnog flavors with a creamy texture from the whipped cream. This trifle can use non-alcoholic eggnog for those avoiding alcohol.
Portioned in individual glasses, these trifles make an elegant and indulgent dessert suitable for holiday gatherings or special occasions. The combination of mocha and eggnog provides a festive twist with layered softness and lightness.
Ingredients
- cake pieces leftover or ladyfinger cookies
- brewed coffee cold
- eggnog or milk, for a non-alcoholic version, or eggnog liqueur
- ¾ cup whipping cream 6 oz
- 1 tsp. sugar
- chocolate sprinkles optional
- 1 cocoa powder 2 tsp; sweetened
- 2 coffee beans to decorate, chocolate covered
Instructions
- Pour equal amounts of coffee and eggnog liqueur into a small jug. Put some cake pieces in the bottom of the De'Longhi cappuccino glasses, then pour a little of the coffee/eggnog mixture over the cake.
- Next, whip the cream with the teaspoon of sugar, then fold in a little coffee and eggnog just to flavor it. Remove about a third of the cream and add the cocoa until well mixed; set aside.
- Pipe or spoon a layer of the first cream onto the cake.
- Put more cake crumbs on top of the cream and drizzle with more coffee/eggnog mixture. Add some chocolate sprinkles if desired, then pipe or spoon another layer of the cream.
- Repeat with the cake and coffee/eggnog liqueur one last time, and then finish with the mocha cream. I piped stars for a nice finish, then topped them with a chocolate covered coffee bean.
- Chill for at least 4 hours or overnight for best results.
Notes
- Use non-alcoholic eggnog for children or anyone avoiding alcohol.
