Description
Mocha Frosting uses unsalted butter whipped until fluffy, creating a light base for the confectioners' sugar, cocoa powder, and espresso powder mixture. The ingredients are sifted to avoid gritty lumps and combined slowly to maintain a smooth consistency. Vanilla extract adds subtle sweetness while heavy cream adjusts the frosting’s thickness and enhances creaminess. This frosting holds well for decorating and adds a balanced mocha flavor that’s neither too bitter nor too sweet, complementing a variety of baked goods.
The espresso powder provides a genuine coffee taste without overpowering the cocoa, and the whipping process ensures the frosting is neither dense nor runny. Adjusting cream quantity allows control over spreadability. Using Dutch-processed cocoa will deepen the chocolate notes.
This frosting is best applied to cooled cakes or cupcakes and can be piped or spread. It firms up slightly when chilled but should be brought to room temperature before serving for optimal texture.
If the buttercream feels grainy, gradually adding cream while beating improves smoothness. Salted butter can substitute unsalted if the salt amount is adjusted accordingly.
Ingredients
For the Buttercream:
- 2 cups butter unsalted 454g
- 2 lb confectioners sugar 907g
- 2 tbsp cocoa powder
- 1 tbsp espresso powder
- 1 tbsp vanilla 15mL
- 3 tbsp heavy cream 45mL
- 1/2 tsp salt
Instructions
For the Mocha Buttercream:
- Sift the confectioners’ sugar, salt, cocoa and espresso powder into a bowl.
- Whip the butter for about 5 minutes using a paddle attachment (in a standing mixer).
- Beat in the sugar mixture slowly.
- Add vanilla and drizzle in the cream while beating until desired consistency is reached. If the you want the buttercream to have a stronger espresso taste, add as much as you would like!
Notes
- Sift cocoa powder and powdered sugar carefully to avoid clumps that affect piping smoothness.
- Adjust cream or coffee in small amounts while mixing to achieve preferred frosting consistency.
- Use high-quality Dutch-processed cocoa powder for richer chocolate flavor.
- If using salted butter, omit added salt or adjust to taste after frosting is combined.
