Description

Mock Apple Pie replaces the usual apples with Ritz crackers that absorb a boiling syrup made of water, sugar, and cream of tartar, enhanced with lemon juice and zest for bright acidity. The crackers, layered in the pie shell and coated with syrup, take on a softened texture reminiscent of cooked apples. The pie is seasoned with cinnamon and nutmeg to replicate the warm spice profile of classic apple pie.

Ingredients

  • 2 cups water
  • 2 cups sugar
  • 2 teaspoons cream of tartar
  • 2 pie shells or 1 package of refrigerated pie crust dough, unbaked
  • 40 Ritz crackers
  • 1 teaspoon lemon zest
  • 2 tablespoons lemon juice
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • 2 tablespoons butter cut into small pieces

Instructions

  1. Preheat oven to 350 degrees.
  2. In a medium-sized saucepan combine water, sugar, and cream of tartar bring to a boil.
  3. Once the syrup begins to boil, add the lemon juice and lemon zest. Stir lemon juice and zest into syrup in the mixture.
  4. Reduce heat to low, and simmer for approximately 15 minutes
  5. Remove syrup from the heat and cool it to room temperature.
  6. Place one pie crust in a pie pan.
  7. Break crackers into the pie shell.
  8. Pour the syrup over the crackers.
  9. Sprinkle cinnamon and nutmeg over the crackers.
  10. Place the butter pieces on top of the crackers. 
  11. Top with pie shell with remaining pie crust.
  12. Pinch together crusts and then trim off excess crust.
  13. Make a couple of slits in the top of the pie so the steam can escape while cooking.
  14. Bake for 30 to 35 minutes or until the pie crust is golden brown.
