Mock Apple Pie
Description
Mock Apple Pie replaces the usual apples with Ritz crackers that absorb a boiling syrup made of water, sugar, and cream of tartar, enhanced with lemon juice and zest for bright acidity. The crackers, layered in the pie shell and coated with syrup, take on a softened texture reminiscent of cooked apples. The pie is seasoned with cinnamon and nutmeg to replicate the warm spice profile of classic apple pie.
The pie is topped with another crust, vented for steam release, and baked until the crust is golden brown. The butter dotted on top of filling adds richness and moisture to the pie. The process yields a dessert with the look and taste cues of apple pie without fruit, suitable when fresh apples are unavailable.
The pie can be served warm or chilled, pairing well with cream or ice cream. Its unique filling texture distinguishes it from fruit pies, making it an interesting option for those seeking novelty or using pantry staples.
